Rosemary, Lentil and Tomato Soup
1 tblspn olive oil
1 large onion, sliced
1 garlic clove, finely chopped
1.5 tblspn fresh rosemary, chopped
150g red lentils
2 tins of chopped tomatoes
500ml vegetable stock
Seasoning
Gently fry the onion, rosemary and garlic until the onion is soft but not coloured.
Add the lentils and stir. Add the tomatoes and stock. Stir.
Bring to the boil then reduce the heat. Simmer for 30 mins.
Season carefully, adding extra rosemary if you like. |

Had a couple of folks from the Newcomers Lunch that had my veggie chili and wanted the recipe so here you go!
Veggie Chili
Ingredients:
2 medium potatoes
1 large onion
2 cloves of garlic
1 yellow bell pepper
1 medium zucchini
1 can (15 oz.) Garbanzo beans
1 can (15 oz.) kidney beans
1 can (28 oz.) Diced Tomatoes
1 can (3 oz.) tomato paste
1 Tb of chili powder
1 tps of ground cummin
1 tps of oregano
1 tps of red pepper sauce
1/2 tps of salt
Dump all canned items (with their juices) in a large soup pot. Peel and chop potatoes in small cubes and put in pot. Cut up zucchini and put in pot. Add all listed spices to the pot. Saute chopped onion, chopped bell pepper, and chopped garlic in olive oil. When the sauteed veggies are done, place them in the pot. Stir, cover, and simmer for at least an hour.
