Broccoli Casserole

1 medium chopped potato peeled & chopped
1/2 carrot chopped
1/2 medium onion chopped
1 cup water
1 tsp salt
1 lb of frozen broccoli chopped or 2 heads of broccoli chopped
1 1/2 cups of diced mushrooms
1/4 - 1/2 cup of water
4 oz firm tofu crumbled
1 tbsp fresh lemon juice
pinch of garlic minced
1 cup uncooked instant brown rice
3/4 cup water


Preheat oven to 350. In a small sauce pan, bring the potato, carrot, onion, 1 cup water and salt to a boil over medium heat. Lower heat to medium, cover and simmer until potato and carrot are tender. Cook mushrooms in separate pot in 1/4 - 1/2 cup of water, drain when soft. Pour potato mixture into blender and add tofu, lemon juice and garlic. Blend until very smooth and creamy. Pour into shallow, greased (with olive oil) 1 1/2 - 2 quart casserole dish. Add the broccoli, rice, mushrooms and 3/4 cup water and stir well. Smooth the top of mixture. Bake until golden brown and bubbling, about 40 minutes.
