Creole Vegetable Jambalaya
3 tbsp olive oil
1 Bell pepper diced
1 Onion diced
1 Tomato diced
8-10 mushrooms sliced or chopped
1 Zucchini
2 Stalks of celery diced
1-2 Cloves of garlic minced
2 cans of diced tomatoes with juice
3/4 cup of vegetable stock
3 Okra sliced
1 1/2 - 2 cups chopped broccoli
1 can black beans
1 tbsp dry red wine (optional)
1 tbsp oregano
1 tbsp fresh parsley minced
2 tsp thyme
1/2 tsp black pepper
1/4 tsp white pepper
1/8 tsp cayenne pepper
1/2 tsp salt
4 cups cooked brown rice (can substitute 3 cups barley)
Heat in a stockpot the oil, bell pepper, onion, tomato (not the canned yet), mushrooms, zucchini, celery, and garlic stirring over medium heat until soft. Lower heat to simmer and stir in remaining ingredients except for the rice (or barley). Simmer uncovered for 15-20 minutes stirring frequently.
Serve either over the rice or mix the barley in with it.
We used barley to give us a change of pace. I have served this to my family and some friends and have gotten a thumbs up on this recipe. |
