I doctored a 15-bean soup recipe yesterday that was a big hit.
Prepare the 15-bean soup according to package directions. In the last 30 minutes of cooking, saute minced garlic in olive oil in a skillet.
At the same time, thaw a bag of frozen mixed onion, celery and carrots (I get it at Kroger -- it's a recipe starter called mire poix, basis of a lot of French/cajun cooking). Add them to the garlic and olive oil and saute until the onions are translucent.
Stir the mixture into the bean soup. Then add a 28-ounce can of crushed tomatoes and, if you want, a bag of Morningstar "sausage" crumbles. (It's textured vegetable protein.) Season to taste. |
